Halibut
Baked Halibut a la Kannesteinen
Ingredients
800 g halibut fillet
200 g small fennel
4 tbs olive oil
1 tbs lemon juice
1 tbs coarse mustard
1 tbs finely chopped red onion
1 tbs finely chopped dill
2 tbs sweet soy sauce
2 dl broth
1 dl white wine
Small tomatoes cut into two
Salt and pepper
How to
Cut the halibut fillet in serving portions and bake them on a greased tray (200°C / 390°F)for about 8 minutes) together with the tomatoes.
Cut the fennel into chunky pieces and boil them in slightly salted water until tender (about 8-10 minutes).
Bring to a boil the white wine, the broth and the soya sauce whilst continuously stirring until the sauce thickens. Season with salt and pepper.
Mix red onion, mustard, dill, lemon juice and olive oil. Pour the mixture over the fish before serving.
Can be served with potato, rice or pasta.
